The ingredients needed to make No Maida Naan:
  1. Make ready 1.5 Cups Semolina (Baarik Sooji)
  2. Take 1/2 Tsp Salt
  3. Prepare 1/2 Cup Curd
  4. Make ready 1/4cup milk
  5. Get as required Ghee for greasing
  6. Take As needed Butter for brushing
  7. Prepare 1/2 tsp Kalonji seeds
  8. Prepare 1/4cup Fresh Coriander leaves

Serve the healthy and delicious Whole Wheat Naan along with your Paneer Butter Masala or Kadai Paneer along with a salad and raita for a weeknight dinner or for parties. Flour: Naan is always made with all-purpose flour (or maida). For health reasons please choose organic or atleast unbleached flour. You can substitute all-purpose flour with wheat flour but you will surely not get the kind of fluffy, soft and chewy texture in your naan.

Steps to make No Maida Naan:
  1. Mix nicely suji with curd.
  2. Now add 1 tsp ghee and salt. Knead the flour.
  3. Add half tsp salt and milk as required for kneading dough.
  4. Knead until smooth.
  5. Cover and keep aside for minimum 2 hours for suji to rise.
  6. After 2 hours, knead lightly again and make 8 balls.
  7. Roll it lightly and brush ghee on it. stick kalonji and fresh coriander leaves on it. Gently press and shape it oval.
  8. Keep little thickness for softer naans.
  9. Now take a greased griddle. Cook the naan from back side a little
  10. Now transfer on a net cover and gently cook it from both sides on gas until nice brown.
  11. Lastly brush with butter and enjoy with makhani dal, dum aloo or any paneer dish

For health reasons please choose organic or atleast unbleached flour. You can substitute all-purpose flour with wheat flour but you will surely not get the kind of fluffy, soft and chewy texture in your naan. If you want to prepare naan in a hurry then you can replace yeast with baking powder. But yeast gives the best texture to naan. Naan are always made with all purpose flour/maida. yet the same soft texture can be achieved with whole wheat flour.
