But our absolute favorite is Watermelon Rind Chutney - made from the lovely white part residing quietly between the fruit and its hard green exterior. This has to be one of the most underutilized parts of the watermelon.
Steps to make Watermelon rind and Tomato sweet and sour chutney:
- Heat oil and add the paanch phoran and whole dry red chilli then add the watermelon rind. Give a quick mix then add the ginger paste,turmeric, red chilli powder, cummin and coriander powder, salt and mix and cook for sometimes covered (add little water as and when required), then add the tomatoes and cook covered.
- When the watermelon rind has softened add the Jaggery and cook for about 15 minutes or so, add the black rock salt, roasted Cummin and coriander powder and lemon juice. Your chutney is ready !!
