The ingredients needed to make Hokkien Noodles:
  1. Take 1 packet thick Hokkien Noodles (440g)
  2. Prepare 1 tp corn starch + 1 - 2 tbsp water
  3. Get 1 C shrimp (or fishballs)

  5. Take 1 C cut green vegies
  6. Prepare 4 cloves garlic - finely chopped
  7. Make ready 3 tbsp lard/ cooking oil

  10. Take 1 tsp sesame oil
  11. Get 1 tsp chicken cube or chicken powder seasoning (to taste)
  12. Make ready 1/2 C water or chicken stock/pork stock
  13. Get 2 tsp sugar

  15. Make ready 1 . Some people use animal fat like lard or beef dripping to cook this noodle
  16. Make ready 2 . Marinara mix can be used in placed of fish balls/fish cakes

Hokkien Noodles : These oiled fresh noodles , made from wheat flour and egg, were introduced to Malaysia by Hokkien Chinese and are now found in stir-fries around the world. Udon Noodles : Fat, white Japanese udon noodles , made of wheat flour, are rustic and satisfying. Drain, refresh in cold water, then thoroughly drain again. Trim ends from choy sum, then cut crossways into three and wash well; drain.

Steps to make Hokkien Noodles:
  1. There are variations of hokkien noodle. Choose the thick one. Soak noodles in boiling water to soften. Drain and set aside. Since i don’t take pork or lard, i use other type of animal fat. Below is a picture of animal fat i use at home.
  2. Heat wok. Pour in oil (or lard if using). Add garlic then meat slices, cook for 2 to 3 mins.
  3. In separate bowl, mix all the sauces- cooking caramel (if using), dark soy sauce, sesame oil, ground pepper. Pour this mixture into the wok. Add water, sugar and chicken cube (if needed). Stir. Then add noodle and cut green vegies of your choice. Next Add corn starch mixture. Let it simmer again till gravy thickens. Adjust taste to your liking. If using lard, add another spoon of lard to the noodle at this stage. Stir and remove from the heat.
  4. Serve hot.

Drain, refresh in cold water, then thoroughly drain again. Trim ends from choy sum, then cut crossways into three and wash well; drain. In the meantime, combine all of the sauce ingredients into a small bowl and whisk well. When it comes to cooking Hokkien noodles, the very basic thing is quite simple. The Hokkien noodles have to be simmered in long-cooked, tasty stock, so that the noodles absorb all the flavours.
