Since both the bhaji (vegetable gravy) and pav are served together, hence the name ' Pav bhaji ' Pav bhaji is basically a mix of mashed & spiced vegetables in a gravy. A special spice blend ' Pav Bhaji Masala ' is used to make pav bhaji. Heat the oil in a wok over medium heat.

The ingredients needed to make Pav bhaji:
  1. Prepare potatoes boiled
  2. Get chopped capsicum
  3. Take boiled carrot,cauliflower
  4. Take green peas
  5. Get chopped onion
  6. Prepare lemon juice

  8. Take ginger garlic paste
  9. Prepare pav bhaji masala
  10. Get Salt to taste

Pav Bhaji is a medley of mashed vegetables simmered in onion tomato gravy, special pav bhaji masala powder and lots of butter.

Steps to make Pav bhaji:
  1. Firstly, in a large kadai heat  butter and add 3 tomato, cup peas,capsicum, boiled cauliflower  potato and salt saute for 2 minutes.
  2. Also, add 1/2 cup water and mix well.
  3. Cover and boil for 10 minutes.
  4. Mash the vegetables smoothly making sure there are no lumps.
  5. Now add Kashmiri redchilli powder, turmeric, 1 tsp pav bhaji 1 tsp kasuri methi and 2 tbsp coriander leaves.
  6. Saute for a minute making sure the spices are cooked well.
  7. Stick the prepared vegetable mixture to sides of the pan and create space at the centre of kadai.
  8. Heat a tbsp of butter and add ¼ tsp chilli powder, ½ tsp pav bhaji masala, kasuri methi.
  9. Also add 1 tbsp coriander leaves, 1 tsp ginger garlic paste, 1 onion and lemon juice.saute well making sure the onions are cooked well.
  10. Further, add 1/2 cup water or as required adjusting consistency. Boil and mash for 5 minutes or till pav bhaji turns smooth and silky in texture.
  11. Now prepare the pav by heating 1/2 tsp butter and add a pinch of chilli powder, pav bhaji mix well.
  12. Now slit 2 pav in centre and roast with spiced butter.
  13. Roast both sides of pav till they turn slightly warm
  14. Finally, serve pav and bhaji  with some chopped onions, lemon and dollop of butter.

Variants of the dish may use other bread varieties such as chapati, roti or brown bread.. Pav Bhaji is a medley of mashed vegetables simmered in onion tomato gravy, special pav bhaji masala powder and lots of butter. Serve them with Ladi Pav Pav Bhaji bread, a dollop of butter on top of the Bhaji, along with chopped onions and lemon wedges. Some people call is Pau Bhaji, Paav Bhaji, Paav Bhajji, Pav Bhaji Masala.
