  2. Sift maida, Baking powder & baking soda in an another bowl.
  3. Line the tin with butter & place pineapple slices in tin & fill the space remaining in the tin with cararmel (make caramel with sugar).
  4. Preheat your oven at 160'c for 15 to 20 min.
  5. Mix maida mix into butter mix gradually until fully incorporated.
  6. Add pineapple essence to it.
  7. Add soda into cake batter & whisk well it.
  8. Add this batter on lined tin over caramel & pineapple slices.
  9. Bake this batter at 160'c for 50 min to 1 hour & your cake is ready for serving, serve warm cake with icecream.

To decorate, whip the double cream to soft peaks and spoon into the piping bag fitted with a medium closed star nozzle. Pipe a rosette of cream on the top of each pineapple cake and finish with a maraschino cherry with stem. Serve the cakes with the warm custard, if you wish. I tried the pineapple upside down cake today for the first time and it was a triumph - delicious! Immediately invert onto wire racks to cool.
