Combine Dashi Stock, Soy Sauce and Mirin in a small saucepan, bring to the boil, and simmer for a few minutes. Cook a thin omelette and cut into thin noodles. Warm 'Inari-zushi no Moto' (Seasoned Abura-age) to soften, lightly squeeze, carefully open the bags. Probably you are familiar with a type of Sushi called 'Inari-zushi', which is Sushi Rice wrapped in seasoned Abura-age (Thin Fried Tofu).

The ingredients needed to make Soba Inari:
- Prepare 2 x 90g Dry Soba Noodles
- Prepare 12 pieces ‘Inari-zushi no Moto’ (Seasoned Abura-age)
- Prepare 1 Egg *cooked into a thin omelette
- Make ready 1/2-1 tablespoon Toasted Sesame Seeds
- Take 1 Spring Onion *finely chopped
- Make ready Sauce
- Take 1/4 cup Dashi Stock *OR 1/4 cup Water & 1/8 teaspoon Dashi Powder
- Prepare 1 & 1/2 tablespoons Soy Sauce
- Make ready 1 tablespoon Mirin
It is a fantastic pick-me-up type of snack since the rice and tofu fill you up while the vinegar cleanses your palate and replenishes some of your lost electrolytes (if it sounds like I'm trying to sell you all on inari zushi, I'm really not–it's just one of my favorite. Good for a party tray, but it is a lot. Whole, they are about the size of a playing card. Second, to season aburaage, it must be blanched then braised with sugar and soy sauce.
Steps to make Soba Inari:
- Combine Dashi Stock, Soy Sauce and Mirin in a small saucepan, bring to the boil, and simmer for a few minutes. Then allow to cool.

- Warm ‘Inari-zushi no Moto’ (Seasoned Abura-age) to soften, lightly squeeze, carefully open the bags.
- Cook Soba Noodles as instructed. DO NOT add salt into the water. Drain, rinse well in COLD water, and drain well again.
- Combine drained Soba Noodles, Egg, Toasted Sesame Seeds and the cooled sauce. Fill up Abura-age bags with noodle mixture. Discard the excess sauce.
- Place some finely chopped Spring Onion on top of each piece.
Whole, they are about the size of a playing card. Second, to season aburaage, it must be blanched then braised with sugar and soy sauce. From this point on, if you make sushi, it becomes Inari Sushi. If you add them to udon or soba soup, they will be called Kitsune (fox). You may store Inari (without the sushi rice) in the refrigerator for up to one week.
