Bring a pan of water to the boil. Add the peas and edamame beans to the water, bring back to boil, then rinse, drain and refresh under cold water. Whisk the salad dressing ingredients together, then taste and season with salt and pepper if necessary. Pour the dressing over the salad and mix thoroughly until everything is well coated - this is best done with your fingertips or chopsticks.

  1. Cook beef strips on a hot skillet until medium rare
  2. Place noodles in a bowl, pour boiling water, let it stand for 2 minutes and drain. top with beef, snow peas, mint, bean sprouts, onions, dressing; toss together, check for seasoning, portion into individual serving bowls, top with sesame seeds, peanuts, garnish with fried shallots and coriander and enjoy!!
