Saute onions, celery and carrots in canola oil on stovetop until soft. Put in slow cooker, add chicken and bundled chicken carcass, then chicken base and spices. Fill the pan with cold water so that everything is covered, then place on a high heat and bring to the boil. Put the chicken on a board and shred into bite-size pieces using a couple of forks.

Add in the vegetables and the roast chicken pieces plus the noodles. Simmer until the noodles have loosened apart and the vegetables are tender. Do not overcook them, you still want a good bite to them.
