Place the oil, ginger, star anise, cinnamon stick, bay leaf, cut dried chillies and sichuan peppercorns in a saucepan and heat on medium-low heat. Also called Chinese chili flakes, Sichuan chili flakes are made by deep frying whole Sichuan peppers in vegetable oil until crispy, and grinding them into flakes (seeds included). Put all the dry spices in a skillet and gently heat them up until they are fragrant. Transfer all the heated spices into the oil and let it gently simmer for a few minutes on low heat, stirring it every few minutes and watching it.
Steps to make Sichuan Chili Oil:
- First pot boiling oil
- In a pot heat oil up and put ginger, dried chili, shallot and spring onion fry till golden brown then remove from heat set aside

- In another pot lightly toast chili powder with Sichuan peppercorn till pop then off heat and pour the FIRST POT BOILING OIL and stir gently
- Keep all the ingredients in the chili oil for 3 days as it is
- After 3 days filter the oil and it's ready to be use
Put all the dry spices in a skillet and gently heat them up until they are fragrant. Transfer all the heated spices into the oil and let it gently simmer for a few minutes on low heat, stirring it every few minutes and watching it. Grind red and green sichuan peppercorns in a spice grinder or mortar and pestle until a fine powder forms, then set aside. Heat oil, red pepper flakes, star anise, ginger, scallion, cinnamon, bay leaf, cumin and coriander in a large, heavy bottomed saucepan over medium heat. Sichuan chilli oil, or Szechuan chilli oil, is a popular ingredient throughout China, though it originates in the tongue-tingling spicy cuisine of Western China's Sichuan province.
